The Perfect (Surprisingly Nutritious) Autumn Treat

 

 

It’s that time of year again, Pumpkin Spice EVERYTHING! Over at INFINIT nutrition we have been baking up some warm delicious pumpkin spice protein cookies.

Whether you’re craving something sweet, need a mid-day boost, or just finished a workout, this treat is sure to do the trick and sneak in some extra grams of protein.

Pumpkin spice cookies satisfy your craving for a sweet treat while also providing nutritious health benefits. Pumpkin is a nutrient-dense low-calorie food packed with vitamin A, fiber, and antioxidants.

Fiber not only helps with digestive health but curves your appetite leaving you feeling full for longer. No matter your niche, protein is an important nutrient for everyone. Its role is to support the maintenance and growth of your body’s muscles, bones, tendons, skin and blood.

After a workout, protein is also important, as it aids in muscle recovery and replenishes muscles that are broken during exercise. It is also the most filling macronutrient, making you feel full for longer which leads you to not overeat. Other health benefits of protein include stabilizing blood sugar levels and can lower your blood pressure reducing the risk of having a stroke or heart attack.

 

 

Pumpkin Spice MUD Protein Cookies

Yields: 28 Cookies

 

Cookie Ingredients:

2 ½ cups all purpose flour

2 scoops RAW or MUD

1 tsp baking soda

1 tsp ground cinnamon

½ tsp ground nutmeg

½ tsp salt

½ cup unsalted butter, softened

1 ¼ cup granulated sugar

½ cup canned pumpkin Puree

1 large egg

1 tsp vanilla extract

Icing Ingredients:

4 tbsp butter

¼ cup cream cheese

1 ½ cup powdered sugar

½ tsp vanilla

 

pouring mix into bowl

 

Directions:

  1. In a medium bowl, mix flour, MUD, baking soda, cinnamon, nutmeg and salt.
  2. Using an electric mixer in a large bowl, beat the butter and sugar until blended. Mix in the pumpkin puree, egg, and vanilla until smooth.
  3. Slowly mix in the flour mixture until combined
  4. Cover and chill in the fridge for 1 hour or until dough is firm enough to roll in hands.
  5. Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
  6. In a small bowl mix icing ingredients together.
  7. Using a tablespoon, roll out cookie dough into balls and place cookies 2 inches apart on the baking sheet.
  8. Bake for 10-12 minutes or until lightly browned on the bottom.
  9. Let cook for 8-10 minutes then lightly spread icing on.
